Johnny Cake,  is a popular Caribbean dish. It’s a type of fried or baked bread made from a simple dough. Here’s a basic recipe for making Johnny Cake:


  1. 2 cups all-purpose flour
  2. 2 tsp baking powder
  3. 1/2 tsp salt
  4. 1/4 cup sugar (optional, for a slightly sweet Johnny Cake)
  5. 1/4 cup butter or shortening
  6. 1/2 cup milk (you may need a bit more, depending on the dough consistency)
  7. Vegetable oil (for frying, if desired)


  1. Prepare the Doug – In a large mixing bowl, combine the flour, baking powder, salt, and sugar (if using). Mix well to ensure the dry ingredients are evenly distributed
  2. Add the Fat – Cut the butter or shortening into small pieces and add them to the dry ingredients. Use a pastry cutter or your fingers to work the fat into the flour mixture until it resembles coarse crumbs.
  3. Mix in the Liquid – Slowly pour in the milk while stirring the mixture. Continue to mix until a soft dough forms. You may need to add a bit more milk if the dough is too dry, or a bit more flour if it’s too sticky.
  4. Knead the Dough – Turn the dough out onto a floured surface and knead it gently for a few minutes until it comes together and becomes smooth.
  5. Shape the Johnny Cakes – Roll out the dough to about 1/2-inch thickness. You can then cut it into rounds or squares using a cookie cutter or a knife.
  6. Fry or Bake – Heat about 1 inch of vegetable oil in a skillet over medium heat. Once the oil is hot, carefully add the Johnny Cakes and fry them until they’re golden brown on both sides, about 2-3 minutes per side. Drain them on paper towels.
